Molasses is a by-product of the sugar and alcohol manufacturing process. It is nothing more than the sugarcane juice concentrated by the evaporation of water (sugar extraction) until it reaches a desired solids content (Brix). Contains reducing sugars and part of the non-crystallized sucrose.
